Summer is the perfect time to enjoy fresh, colorful vegetables packed with flavor and nutrition. Whether you're growing your own garden favorites or picking up fresh produce from a local farmers market, today is a great reminder to add a little more color to your plate!
Try this easy Summer Veggie Salad:
Ingredients:
2 cups cherry tomatoes, halved
1 cucumber, diced
1 cup sweet corn (fresh or grilled)
1 avocado, diced
¼ red onion, thinly sliced
¼ cup feta cheese
Fresh basil leaves
Dressing:
2 tbsp olive oil
1 tbsp fresh lemon juice
Salt & pepper to taste
Directions:
Combine all salad ingredients in a large bowl.
Whisk together olive oil, lemon juice, salt, and pepper.
Toss with the salad and serve chilled.
