Meet Don and Varaporn Higbee, the husband-and-wife team behind Thai 208! Their homemade Thai dishes quickly gained a following, turning a pandemic project into Idaho Falls’ first Thai food truck.
Their delicious food brought crowds from all over Idaho, with lines forming before they even opened.
Vara had been running the food truck for almost three years when a building in town became available to lease. Knowing that Thai 208 had built a great following within the community, the Higbees decided to take the leap. After being in the brick-and-mortar for a year, the building owner asked the Higbees if they would be interested in buying. They knew that owning their building would be a tremendous opportunity for long-term stability for the restaurant. With the building now theirs, Thai 208 will continue to serve bold flavors and the right amount of spice that leaves Idaho Falls hungry for more.
