Ever wondered what the 'legal definition of Scotch whisky is?'

It’s more than just being made in Scotland — there are strict rules that protect its identity and quality.

To be called Scotch whisky, it must:

• Be produced and distilled in Scotland
• Be made from water, malted barley (with optional whole grains), and yeast.
• Processed at the distillery into a mash, converted at that distillery into a fermentable substrate only by endogenous enzyme systems; and fermented at that distillery only by the addition of yeast.
• Be distilled to less than 94.8% ABV to retain natural flavour
• Be matured in Scotland in oak casks (max 700 litres)
• Be aged for at least 3 years
• Mature in approved warehouses only
• Keep its natural colour, aroma, and taste from ingredients and process
• Contain no substances except water and/or plain caramel colouring
• Be bottled at a minimum of 40% ABV

In short: every drop of Scotch whisky is tightly regulated to preserve authenticity, heritage, and character.

For centuries, the “Angel’s Share” has been accepted as part of whisky’s maturation process.
Now, data and AI are challenging that idea.

By tracking every cask, analysing warehouse conditions, and learning from millions of data points, new platforms are helping distillers reduce losses while preserving quality.

Is this the future of maturation—where tradition and technology work side by side?
