Warning: this Marry Me Chicken might have people asking for seconds… and your hand in marriage. 😂🍝✨
Quick, easy, and tastes like something you’d order at a restaurant.
Ingredients:
• 1 onion, finely chopped
• Olive oil
• 1 tablespoon butter
• Garlic, finely chopped (to taste)
• 2–3 chicken breasts (enough for 2 people)
• Spices: chicken spice, dried herbs, paprika, a pinch of turmeric, salt and pepper
(add any extra spices you love)
• Chicken stock
• 250 ml fresh cream
• Sun-dried tomatoes, chopped
• Pasta (any type, but penne works especially well)
• Spinach (optional, but highly recommended)
• Cheese: Parmesan, or white Cheddar/Gouda
Method:
Heat olive oil and butter in a pan. Fry the onion and garlic until soft and lightly golden.
Add the chicken breasts (I cut mine into chunky cubes, but you can shred them later if preferred).
Season with all the spices and add the sun-dried tomatoes. Cook until the chicken is fully done.
Meanwhile, bring a pot of salted water to the boil for the pasta. Add a little oil to prevent sticking. Cook pasta according to package instructions.
Remove the cooked chicken from the pan and set aside.
In the same pan, add the cream and dissolved chicken stock. Heat gently.
Shred the chicken and return it to the sauce.
Once the pasta is cooked, add about 1 cup of pasta water to the sauce. This helps thicken the sauce and coat the pasta beautifully.
Add the spinach (finely chopped) and simmer for a few minutes until the sauce is creamy and thick.
(If the sauce gets too thick, add a little water or milk.)
Finally, stir in the cheese until melted, then mix the pasta through the sauce.
