South African Style Crayfish Braai.... Braai Day After Party 2015 !!

INGREDIENTS
4 crayfish - 400-500gr Deep sea Lobster works best (or big prawns if not all eaten on Braai day)
Garlic and parsley butter
1 head garlic clove, roasted
125 grams butter
1 grated lemon peel and juice
80 gr chopped parsley
1 pinch sea salt
4 lemon wedges, for serving

METHOD
Halve crayfish lengthways and remove vein
Rinse and pat dry with kitchen paper
GARLIC & PARSLEY BUTTER
Squeeze flesh out of roasted garlic. Place garlic, butter, lemon peel and juice and parsley into a blender, season and blitz until smooth.
Spread a generous dollop of butter over the cut side of each crayfish
Cook crayfish, cut-side up, over medium-hot coals for 5 minutes
Turn and cook for 3-5 minutes more, or until just cooked
Dollop with remaining butter and serve with lemon wedges

GREAT IDEA
For cheat’s roasted garlic, cut the top off a head of garlic, drizzle with a little olive oil and microwave for 5-10 minutes until soft and fragrant

Simple Prawn Braai Recipe !!
Nou Gaan Ons Braai !!!!!

30 prawns - Breezewood Trading recommends the L1 Argentine Wild caught prawn !!!

MARINADE
100 g Green chillies - Fresh is always better
250 ml (1 c) olive oil
250 ml (1 c) sunflower oil
2 garlic cloves
250 ml (1 c) lemon juice
30 ml (2 T) salt

Put the prawns in a glass bowl.
MARINADE Pulse all the ingredients for a few minutes in a food processor until well blended.
Pour over the prawns, mix to coat well then marinate for about 1 hour.
Braai the prawns over moderate coals until just cooked. Serve with lemon wedges.

TIP Braai the prawns directly on the grill over medium-hot coals. Turn often and baste. The prawns are cooked when the shells turn pink, which should be after about 8 minutes. Heat the rest of the marinade and serve as a dipping sauce.
