Did you know you can make milk tart without turning on the oven? 👨‍🍳 If you’ve never trusted yourself with the classic, this no-bake version with Fair Cape Full Cream Milk is the perfect place to start 🙌 Make sure to save the recipe – you’ll be making it on repeat.
🐄 INGREDIENTS
Biscuit Crust:
200 g tennis biscuits or digestive biscuits, crushed
125 g Fair Cape Salted Butter, melted
Filling:
750 ml (3 cups) Fair Cape full-cream milk
1 cinnamon stick
100 g (½ cup) white sugar
45 g (4 ½ Tbsp) cornflour
4 Large eggs
40 g Fair Cape Salted Butter, cubed
10 ml (2 tsp) vanilla extract
Pinch of salt
To Finish:
5 ml (1 tsp) ground cinnamon, for dusting
🍰 METHOD
1. Combine the crushed biscuits with the melted butter until it resembles wet sand. Press firmly and evenly into the base and up the sides of a 23cm loose-bottomed tart tin using the back of a spoon or a flat glass. Chill for 15 minutes while you make the custard.
2. In a heavy-based saucepan, warm the milk with the cinnamon stick over medium heat until steaming but not boiling. Remove from heat, cover, and let infuse for 10 minutes, then remove the cinnamon stick.
3. In a bowl, whisk the sugar, cornflour, vanilla and eggs together until smooth and pale.
4. Slowly pour the warm infused milk into the egg mixture, whisking constantly, then return the whole mixture to the saucepan.
5. Cook over medium-low heat, stirring constantly, until the custard thickens to a pudding-like consistency and coats the back of a spoon, about 6–8 minutes. Do not let it boil or it may curdle.
6. Remove the saucepan from the heat and whisk in the remaining butter until glossy and fully incorporated.
7. Pour the warm custard into the chilled crust and smooth the top with a spoon.
8. Cover loosely and refrigerate for at least 4 hours, or until fully set and sliceable.
9. Dust generously with ground cinnamon just before slicing and serve chilled.
