For the next three weeks we will be sharing some late summer recipes favored by two fantastic chefs here at Yoakum Bank. That way, by Labor Day weekend you'll be potluck cook out ready!

Next we have renowned pit-master Jamey Collinsworth, who has shared with us his Angel Hair Pasta Salad - the perfect pairing with some pulled pork!

Ingredients:
1 pint cherry tomatoes
1/2 jar basil pesto
2 TB olive oil, divided
1/2 tsp salt
1/4 tsp pepper
1 8oz package of angel hair pasta
1 2oz jar pine nuts, toasted
1 bunch of basil, roughly chopped
Freshly shaved parmesan cheese to taste

Method:
1. Preheat oven to 400 degrees.

2. Line a sheet with parchment paper. Toss the tomatoes, pesto, 1 TB olive oil and salt and pepper in a mixing bowl and transfer to the prepared sheet pan. Roast until tomatoes start to blister, about 25 mins.

3. Meanwhile, bring a large pot of salted water to boil. Cook pasta according to package instructions, reserving 1/2 cup of pasta water.

4. Place pasta in a large serving bowl. Add roasted tomato mixture and pasta water and toss to combine.

5. Add pine nuts, basil and shaved parmesan. Drizzle with remaining olive oil and serve.

First up, we have Kim Cox's Jalapeno Popper Chicken Salad. Try it on a sandwich, serve it as a dip on crackers or have it in a wrap. This chicken salad truly goes with everything!
