I had to learn, but thanks to the belated Prof. Barone from Italy I've learned a lot; not to forget Lori and Martin from the Ontario Water Buffalo Co. which always supported me with precious details. We can happily say we managed to suit a demand for fresh Buffalo Mozzarella, or Mozzarella di Bufala in the US. …and this is just the beginning, we'll strive to soon feature other cheeses from different milk such as sheep, goat and what else we can put our hands on to offer a complete variety of delicious, European homestead cheeses!
