Arkansans love a juicy homegrown tomato in the summer, but have you ever thought of using it in a cake? Give it a try with this recipe from Arkansas Living Magazine:

Whisk together dry cake ingredients in a mixing bowl. Add in pureed tomatoes, sour cream, eggs, vegetable oil and vanilla extract. Beat with an electric mixer for 2 minutes. Divide batter between prepared pans.
