In honor of Presidents’ Day, we thought it would be fun to reflect on some lesser-known facts about past U.S. presidents. From Abraham Lincoln’s wrestling prowess to Calvin Coolidge’s fondness for raccoons, history holds many surprises beyond the politics!

This weekend calls for a “super bowl” — and no, we’re not talking football! We're talking about a super burrito bowl that’s perfect for game day. 🏈

Here’s how to whip up a winning dish:

🍚 Cook 3 cups of cilantro lime rice (or use white or brown rice).
🌶️ Sauté fajita veggies — green peppers, red peppers, and onions.
🥣 In a large bowl, layer the rice, 2 cups of beans (black or pinto), and sautéed veggies.
🥑 Top with your choice of salsa, guacamole, shredded cheese, or other favorite toppings.
🧂 Sprinkle with sea salt and pepper, and serve with lime wedges and tortilla chips.

The best part? You can easily double or triple the recipe for a crowd and ask guests to bring their favorite toppings for a true team effort!
