💼 What do mortgages and Italian ice have in common? More than you'd think.

On this week’s On The Delo, Delo sits down with Jeremiah — Air Force veteran, 20-year mortgage broker, and multi-unit Jeremiah’s Italian Ice franchisee — to talk about why systems are the difference between scaling a business and watching it fall apart.

From waking up at 4:35 AM and building high-trust teams to understanding the day-to-day before signing any franchise agreement, this episode dives into the systems mindset required to run multiple businesses without sacrificing your health, culture, or sanity.

If you’ve ever felt stuck in chaos, buried in operations, or stretched across too many priorities, this conversation is packed with grounded, real-world perspective you can actually apply.

What’s on your website and social media matters more than most operators realize. 💻

In this clip, Delo breaks down how the way you market your business online can impact insurance underwriting, risk perception, and ultimately your rates.

From promoting late-night environments to advertising high-risk activities, the content tied to your brand can influence how carriers evaluate your operation.

There are risks in hospitality that most people never see coming… until it’s too late.

Fights. Fires. Over-serving claims. Slip-and-falls. Employee mistakes. Lawsuits. One bad night can change everything for a business owner.

That’s exactly why David “Delo” DeLorenzo wrote RISKY BUSINESS: The Arizona Liquor Liability & Insurance Survival Guide for Bar & Restaurant Owners.

Built from real claims, real stories, and real experience working inside Arizona’s hospitality industry, this book is designed to help operators better understand the exposures that come with running a bar or restaurant — and how to protect what they’ve built.

Whether you own a neighborhood bar, restaurant, nightclub, brewery, or hospitality venue, this is information every operator should know.

Because protecting your business starts with understanding the risks behind it.

Before the 13 locations… before the lines out the door… before ATL Wings became one of Arizona’s favorite wing spots… there was day two.

Cianna and Mike had gone home exhausted after opening their first location, planning to spend the next day just cleaning and regrouping. But when they showed up, there was already a line wrapped around the building waiting for wings.

The only problem? The restaurant wasn’t ready.

So the customers jumped in.

People started washing dishes. Taking out trash. Helping clean the restaurant just so ATL could open the doors that day. ❤️

That moment says everything.

On EP 213 of On The Delo, Cianna & Mike share how ATL Wings grew from struggle, faith, and a simple mission rooted in “All The Luv” — building something real, scalable, and sustainable.

We’re back with Part 2.

In hospitality, the line isn’t always clear—but your responsibility is.

When it comes to identifying an “obviously intoxicated” guest, it often comes down to what you can see, hear, and smell in real time. Slurred speech. Unsteady movement. Changes in behavior. The cues are there—but it’s up to your team to recognize and act on them.

That’s where training, communication, and consistency matter most.

Because these decisions don’t just impact the moment—they can carry real consequences for your staff, your guests, and your business.

There’s no perfect formula. But there is awareness, accountability, and preparation.

In hospitality, some of the biggest liability decisions happen in real time — and often in gray areas.

The phrase “obviously intoxicated” gets used often in liquor liability conversations, but in practice, there’s rarely a one-size-fits-all definition. Every operator, bartender, manager, and security professional has likely faced moments where they’ve had to make a judgment call on the spot.

For this our recent liquor liability panel, we asked industry professionals a simple question:

What is your personal definition of “obviously intoxicated”?

The answers sparked honest conversations around guest behavior, responsibility, risk exposure, and the realities of operating in hospitality today.

If you’re in Arizona hospitality, you’ve probably heard the name ALBA (Arizona Licensed Beverage Association), but what do they actually do?

In this clip from the ALBA panel episode of On The Delo, the conversation breaks down who the Arizona Licensed Beverage Association is and the role they play within Arizona hospitality.

From advocating for liquor license holders to staying involved in industry legislation and operator education, ALBA continues to be an important voice for bars, restaurants, and hospitality professionals across the state.

Behind almost every flight, hospital tray, and “mystery bread basket” is a quiet bakery making it all happen. 🍞

In EP212 of On The Delo, Rudy and his son Thomas share how Strictly From Scratch became the go‑to, 31‑year bakery engine for airlines, hospitals, hotels, and big‑box retailers—while staying below the radar.

Contractors are part of the business—but they can quietly impact your workers’ comp costs if you’re not careful.

Bringing in DJs, security, cleaners, or even marketing support? If they don’t carry their own coverage, their risk could fall on you, and show up during your audit.

We see it all the time:
• Missing Certificates of Insurance
• Incomplete payment tracking
• Wages getting pulled into the wrong classification

The result? Higher premiums and unexpected surprises.

The good news—this is fixable with the right systems in place.

We broke it all down in our latest blog so you know exactly what to track, what to ask for, and how to protect your business.

• Building relationships before you need them
• Creating a brand that actually reflects who you are
• Knowing when you’ve earned the right to make your move

Big conversations are happening around hospitality insurance right now—and we’re proud to be part of it.

Honored to be featured in Insurance Journal, where David DeLorenzo shares perspective on what operators are really facing today—from rising costs and shifting alcohol trends to the realities of liquor liability and coverage gaps.

As highlighted in the article, even with alcohol sales declining, insurance costs aren’t following suit—putting even more pressure on bars and restaurants trying to stay profitable.

This is exactly why having the right strategy—and the right advocate in your corner—matters more than ever.

At Bar & Restaurant Insurance, we stay close to what’s actually happening in the industry so we can help operators navigate it in real time.

If you’re unsure how these trends impact your business, let’s talk.

Arizona Restaurant Week is almost here… and for operators, that means one thing: volume.

From May 15–24, restaurants across the state will see a surge of new and returning guests — a great chance to showcase your concept and create repeat business.

With that comes the need for strong ex*****on.

Busy dining rooms, faster turns, and new guests can test your systems. The small details — communication, pacing, and consistency — make the biggest difference.

A few quick reminders:
• Set clear expectations with staff
• Keep menus simple and consistent
• Stay ahead of pacing between FOH + BOH
• Communicate with guests early if delays happen

Wishing a strong week to everyone participating across Arizona.
