"Chew the Fat"
Salt pork was basic to the diet of seamen in the great age of sailing. As none was wasted, pieces of skin were saved for emergencies. When supplies ran low, each member of the crew might receive a chunk of it in lieu of a slice of meat.
A rind, or skin, was tough and unpalatable, but the layer of fat attached to it was better than nothing. Sailors to whom rinds were doled out chewed off the fat, than often held skins between their teeth for an hour or two.
Casual talk was a natural accompaniment of chewing on rinds. Shipboard sessions with rancid port were so common that the sailors' expression was adopted by landlubbers to lake indulgence of idle talk!

"Honey Orange Cake"
2 cups sifted cake flour
3 1/2 teaspoons of baking power
3/4 teaspoon salt
1/2 cup butter or other shortening
1/2 cup sugar
2/3 cup honey
2 eggs separated and white beaten
1/2 cup orange juice
Sift flour once, measure, add baking power and salt, and sift together 3 times
Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy. add honey. blend. Add egg yokes and beat thoroughly. Add flour, alternately with orange juice, a small amount at a time, beating after each addition until smooth.
Fold in stiffly beaten egg whites.
Bake in 2 greased 9" layer pans in 350 oven 30/35 minutes.

"Xpressions" Potluck
Medieval gentry usually had plenty of rich food, frequently serving four or five kinds of meat at a meal. But families in the lower economic classes had no such abundance. Often a struggle was required to get enough food to prevent hunger.
In order to stretch her food, the wife of a commoner would keep an iron pot on an open fire. She threw all her leftovers into it each day, and kept it simmering much of the time. If a relative arrived unexpectedly, he was likely to have to eat from the pot without having any idea of what odds and ends had gone into it.
This early and literal form of taking "potluck" came to name the act of eating any meal for which the host or hostess has made no special preparation.

"Cooking with Honey"
Honey Peanut Cookies
1 cup shortening
1/2 cup honey
1/2 cup brown sugar, firmly packed
1/3 cup milk
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 cups quick-cooking oats
1 cup chopped raisins
1 cup chopped peanuts
Cream the shortening; add the honey, brown sugar, and the rest of the ingredients in the order given. Roll a teaspoonful of the dough in the hands, place on an ungreased cookie sheet, flattening a little, Bake at 325 degrees for 15-20 minutes. Yields 4-5 dozen cookies.

Putting on the Dog............Huge profits were made during the Civil War by contractors who provided goods to the army. At the cessation of hostilities, fortunes were won from land speculation and railroad building. Members of the newly rich had plenty of money, but usually lacked culture. Seeking to win social acceptance, persons such as Diamond Jim Brady made a vulgar display of opulence.
Lap dogs were all the rage among wives of the wealthy. They spent large sums on pets, and each tried to top the excesses of others. Pampered poodles became linked with the desire for show, so a person making any sort of flashy display was ridiculed as 'putting on the dog.'
