🍑🫐 Late Summer Peach & Berry Chicken Salad 🥗

There’s still time to enjoy the fresh, colorful flavors of summer! This Peach & Berry Chicken Salad is light, satisfying, and packed with grilled chicken, juicy peaches, blueberries, crisp greens, feta cheese, and pecans.

It’s perfect for lunch, a light dinner, or meal prep during a busy week.

Ingredients:
• 2 grilled chicken breasts, sliced
• 2 cups mixed greens
• 1 ripe peach, sliced
• 1 cup blueberries
• ¼ cup thinly sliced red onion
• ¼ cup crumbled feta cheese
• ¼ cup chopped pecans
• 2 tablespoons olive oil
• 1 tablespoon balsamic vinegar
• Salt and pepper to taste

Simply combine the salad ingredients, top with sliced chicken, and drizzle with the olive oil and balsamic dressing.
