Just as spirits nerds yearn for hard-to-find bottles to add to their collections, oenophiles will always pine over a suite of coveted bottles. Whether due to astronomical prices or low allocations, some wine pros catch onto these bottles simply because they are so unattainable. As a result, these wi...

Zaatar Liqueur by The Good Thymes.
Wild zaatar from Kfarhouna (Jezzine District, South Lebanon).
Herbal, bold, a little rugged—and familiar.

A tribute to the South—the mountains where zaatar grows wild, carrying generations of flavor, memory, and craft. The same places that have always held it down, where people and land are tied together in a real way.

We’ve been pouring it at shows and fairs and it’s been kind of crazy—people keep circling back like fiends, “you got more of that zaatar liqueur?”
That’s when you know it's not just nostalgia that's got you excited.

And it’s not happening in a vacuum.
Zaatar is having a real moment in the U.S.

From manoushe concepts to to full service restaurants like and —and all the smaller pop-ups and concepts (RIP Ajeen & Juice , we miss you)—people are finally tapping into something that’s been a staple on Levantine tables forever.

This bottle is part of that story.

Produced by The Good Thymes, with a focus on ethical sourcing, fair partnerships with farmers, and real investment in the rural communities where zaatar actually grows.

Super versatile too.
Drink it neat or chilled.
Build cocktails around it.
Or keep it simple—sparkling water, ice, done. That's how I drink it.

One way or another, it doesn’t stay on the shelf for long.

Available now.

Elevate, from Mersel. 🏔️🐐

In Lebanon, the mountains are everthimg. These come from high up in the Lebanese mountains—old vines, indigenous grapes, crazy altitude. You feel it right away. The air’s cooler, the light’s different, everything slows down just enough to drive home your on higher ground—and it all shows up in the glass.

The mountains in Lebanon aren’t just scenery—they protect. They always have. People have gone up there to escape war, to find relief from brutal heat waves. to hold onto something stable when everything else isn’t. They carry history, memory, and a kind of resilience that’s hard to explain unless you’ve been.

Even now, they’re under pressure again. And still, they stand.

That energy comes through in these wines. There’s tension, freshness, nothing overworked—just honest bottles that feel alive and grounded at the same time.

And yeah—the juice is dope.

Keep an eye out for these.

Coming from a hospitality background, I was always drawn to the beverage side of things—but more than that, to the stories of the humans behind the bottle. It’s been one of the great honors of my life to share wines rooted in place, shaped by people, and carried through story.

My introduction to Rami El Sabban .sabban feels, in hindsight, like a bit of a meet cute.

Rami was working as a somm under at NIU Wine in Miami when we crossed paths. I was there for an event centered on Palestinian and Lebanese wines—wines of land, identity, and resistance. Even then, Rami immediately "got it". Not just the wines, but the deeper purpose behind them. And he didn’t just want to pour them—he wanted to make them.

A few introductions later, and not long after that, and after a stint doing important work in Montreal, Rami was in Lebanon, doing exactly that.

Today, he’s being recognized by Decanter as a “nomadic winemaker,” but that only tells part of the story. Beyond the cellar, he’s engaged in meaningful community and activist work in Lebanon—work that reflects the same intention and integrity he brings to his wines.

Couldn’t be prouder of him—or more excited to share what he’s becoming.

Be sure to look out for the new drop from El Sabban, expected later this month.

Rays of hope in dark times. Wanted to give a special shout out to and for hosting a wines of Palestine and Lebanon event in Des Moines. The community there really showed out, as I know it would from first hand experience. This was originally conceived as a ticketed event with winemakers present to tell their own stories. Due to the ruthless war imposed by bloodthirsty criminal regimes, this was not possible, but , and were present via video and Frederic from gave his trademark impassioned plea for hope amidst all@the inhumanity. The fruits of the land were consumed and the stories of the people were told. Thank you for everyone involved in making this happen and for all who showed out.: Nick, Heather, Frederic, Brian, the cave team, the Abu Nawas team, Moberg, Des Moines, Elkader, Iowa, everyone! Much love ❤️💚🤍🖤
