Darlene Conley - Highlands/Cashiers Howard Hanna Tate Darlene currently holds a license in the State of Georgia and the State of North Carolina. She is also a published author of children’s books.

Darlene and her husband, Paul, are residents of Highlands Cove at Old Edwards Club. Darlene is a graduate of Western Carolina University with a degree in Finance and Economics. Prior to raising a family, she worked in the financial industry; IPO’s, leverage buyouts, mergers, institutional trading and finally working on special projects within international trading. She transitioned from the financ

ial world to working for various groups doing charity fundraising. A few years ago, she began doing renovation/remodeling work for a private investor’s rental properties. That naturally led her into moving towards the Real Estate Sales profession. Darlene and her husband, Paul, are residents of Highlands Cove at Old Edwards Club.

“My family’s roots are embedded in the Mountains of Western North Carolina. My mother was born and raised in Asheville where her family names of the Morgan’s and Smathers’ are part of the history of Buncombe County. While attending Western Carolina University, I met my husband Paul. Our love of the mountains brought us back here years ago, where we built our retirement home. I feel that my greatest strength is the love of the area, and knowledge of what this area has to offer for those who wish to move here.”

This easy pasta recipe is packed with vitamin-rich spinach and healthy salmon tossed in a creamy Alfredo sauce.

Ingredients:
- ½ box spaghetti
- 1 salmon fillet
- ½ cup butter
- ¾ cup spinach, chopped
- 1 (8-ounce) package cream cheese
- 4 cloves garlic, minced
- 2 cups milk
- 2 cups Parmesan cheese, grated
- Pepper, to taste
- 1 teaspoon salt

Instructions:
1. Cook the spaghetti according to the package directions.
2. Preheat the oven to 400°F. Wrap the salmon fillet in aluminum foil, and bake for 15-20 minutes.
3. In the meantime, melt the butter in a skillet over medium heat, and sauté the spinach until it wilts. Add in the cream cheese and garlic, and whisk until smooth. Add in the milk in small increments, and whisk until smooth. Stir in the Parmesan cheese.
4. Toss the spaghetti with the sauce, and season with the salt.
5. Remove the salmon from the oven, flake it with a fork, and add it to the pasta mixture. Serve with a sprinkle of Parmesan cheese, if desired.

Did you know that September is National Honey Month? Here’s a great recipe to try!

Ingredients:
• 4 packages biscuit dough
• 2 c. light or dark brown sugar
• 1½ c. butter, melted
• 2 tbsp. honey
• ½ c. cinnamon sugar mixture
• Walnuts, if desired

Instructions:
1. Preheat the oven to 350°F, and grease a Bundt pan with nonstick spray.
2. Cut each biscuit into quarters, and then coat in the cinnamon sugar mixture. Layer the pieces into the greased pan, making sure they are evenly distributed.
3. In a saucepan, melt together the brown sugar, butter, and honey. Continue to stir until a slightly runny glaze forms, and quickly pour over the biscuit pieces.
4. Bake for 30–35 minutes, until the biscuits are golden brown.
5. Remove from the oven and allow to cool in the pan for at least 10 minutes. Carefully place a large plate or serving tray over the pan, and flip over the Bundt pan. Pull the pan away from the bread ring carefully, avoiding the hot glaze. Top with walnuts, if desired.
