🐄 There is a version of the Ohio county fair that most visitors never see, and it happens after the midway shuts off.

If you were a 4-H kid, fair week meant living at the fairgrounds. You slept on a cot or in a camp chair in the livestock barn because your animal was there and you were not leaving it. The lights stayed on low, the fans ran all night, somebody's radio was playing, and there was always a cluster of teenagers awake at two in the morning doing absolutely nothing important. Then you were up at five to feed and wash and be ready for the judge.

That week did more for a lot of Ohio kids than they realized at the time. You raised something from spring, you kept records, you stood in a ring and answered questions from an adult you had never met, and at the end of it you walked an animal into a sale ring and shook hands with the person who bought it, which is a specific kind of hard that nobody really prepares a twelve year old for.

If you did not grow up in Ohio, somebody has to explain the shredded chicken sandwich to you, and it never quite lands. 🥪

It is chicken, pulled soft, folded into a thick creamy gravy usually thickened with cream of chicken soup and crushed crackers, then piled onto the softest cheapest hamburger bun in the store. It is not barbecue. It is not a hot chicken sandwich. It is its own thing, and it is engineered for exactly one situation, which is feeding two hundred people out of a roaster pan in a room with a linoleum floor.

You know where you had it. Church basement after a funeral. The Methodist stand at the county fair. A benefit supper for somebody's surgery. Election day at the fire station. The bun always dissolves a little on the bottom and nobody has ever once complained about that. Every family has a slightly different recipe and every single one of them insists theirs is the correct one.
