Celebrate National Peach Pie Day today with layers of creamy cheesecake, cinnamon peaches, and a buttery brown-sugar crumble. One bite and you’ll understand why this recipe has us feeling peachy! 🍰🍑✨
Preparation: 👩🍳
1️⃣ Preheat oven to 325°F. Mix the crust ingredients and press firmly into the bottom of a greased 9-inch springform pan. Bake for 8 minutes.
2️⃣ Combine the peaches, brown sugar, cinnamon, cornstarch, and lemon juice in a saucepan. Cook over medium heat for 5 to 7 minutes, until thickened. Set aside to cool. 🍑
3️⃣ Beat the cream cheese and sugar until smooth. Mix in the sour cream and vanilla. Add the eggs one at a time, mixing gently. 🥚
4️⃣ Pour half of the cheesecake batter over the crust. Spoon the peach filling evenly over the center, keeping it slightly away from the edges.
5️⃣ Cover with the remaining cheesecake batter and smooth the top. 🥄
6️⃣ Combine the flour, brown sugar, and cinnamon. Cut in the cold butter until coarse crumbs form. Sprinkle the crumble evenly over the cheesecake. 🧈
