Cowboy caviar pasta salad! 😍😳

Ingredients
1 lb pasta Mel uses farfalle
1 orange bell pepper chopped
1 yellow bell pepper chopped
1 red bell pepper chopped
1 jalapeno chopped (optional)
½ large cucumber chopped
1 can corn - NOT cream corn
1 cup cherry tomatoes cut in half
1 small red onion or ½ large red onion chopped
1 bunch cilantro chopped
2-3 green onions chopped
1 can black beans
Dressing
1 cup mayonnaise of your choice
2 tbsp white wine vinegar
Juice of 1 lime
1 tsp garlic powder
1 tsp cumin
1 tbsp chili powder
1 tbsp maple syrup
2 tbsp olive oil
Salt & black pepper
INSTRUCTIONS:
- cook pasta according to directions and rinse with cold water
- make your dressing and set aside
- add all chopped veggies and beans to the bowl of pasta
-pour dressing over the salad
- mix well and serve.

BLT Pasta Salad 😳😍

Ingredients:
-8 ounces cavatappi pasta, boiled and drained
-1 pound lean ground beef, browned and drained
-Half of a red onion, thinly sliced
-¾ cup of diced dill pickles
-1 cup green leaf lettuce, chopped
-10 ounces cherry tomatoes, sliced in half
-8 ounces mild cheddar cheese, cubed
-2 cups thousand island dressing
-Sesame seeds for garnish
Directions:
1.In a large bowl add your cooked and drained pasta.
2.Add the cooked ground beef, onion, pickles, lettuce, cherry tomatoes, cheese and dressing.
3.Toss to combine.
4.Garnish with sesame seeds.
5.Serve!

Lunchtime meals are available weekly for adults 60+ who do not receive home-delivered meals and want to enjoy food, friends, and occasional programs. No fee; donations encouraged. Meals served at 11:00 am except Sargent Center meal days and holidays. See May's schedule below. Pre-registration required!
