Eat More Fruits and Vegetables Day calls for balance... which is exactly why we’re celebrating with this honeyed rhubarb-strawberry galette! 🍯🍓🥧
Fresh fruit, flaky pastry, and a rosemary honey drizzle that feels just fancy enough to count as self-care. 💛
As far as we’re concerned, life works best when your fruit is covered in flaky pastry, and your future is covered by something built to hold up better than dessert. 😉
Preparation:
• Mix flour and salt in a bowl. Cut in cold butter until the mixture resembles coarse crumbs. Sprinkle ice water over the mixture and stir until the dough just comes together. Wrap in plastic and chill for 1 hour. 🧈🥣
• Preheat oven to 400°F. In a large bowl, toss strawberries, rhubarb, granulated sugar, and cornstarch until evenly coated. 🍓✨
• Roll chilled dough into a 12-inch circle on parchment paper. Transfer the parchment and dough to a baking sheet. 🥧
• Mound fruit mixture in the center of the dough, leaving a 2-inch border. Fold edges over fruit, pleating as needed. Brush crust with beaten egg and sprinkle with coarse sugar. 🍯
• Bake 35-40 minutes until the crust is golden and the fruit is bubbling. Meanwhile, warm honey with rosemary and sea salt in a small saucepan for 2 minutes. 🔥🌿
• Cool galette for 10 minutes, then drizzle with rosemary honey before serving. 😍
