Happy Saturday!
The farm stands are overflowing with corn and tomatoes right now, and we couldn't resist sharing one of our favorite late-summer sides.
Grill or boil a few ears of sweet corn, cut the kernels off, and toss with diced tomatoes, red onion, fresh basil, a squeeze of lime, and a drizzle of olive oil.
Season with salt and pepper and let it sit for 15 minutes before serving so the flavors can mingle.
It's the perfect side for one last cookout before the school buses start rolling!
