🦃🧀 You’re about to be so thankful for great coverage – the cheesy kind and the protective kind! 🍂✨
Instructions:
1️⃣ Preheat your oven to 400°F.
2️⃣ Cut the pumpkin in half, remove the seeds, season with salt and pepper, and roast for about 45 minutes, or until the flesh is tender. 🎃
3️⃣ Scoop out the cooked pumpkin flesh and let it cool slightly.
4️⃣ Mix the pumpkin with one egg yolk, salt, and flour. Adjust the amount of flour based on the pumpkin size if needed – the dough should not be sticky. 🥚
5️⃣ Divide the dough into two portions and roll each into a cylinder.
6️⃣ Cut each cylinder into pieces about the size of a ping-pong ball. 🏓
7️⃣ Flatten each piece slightly and stuff it with a dice of brie cheese and a small measure of pulled turkey. 🧈🦃
8️⃣ Roll the gnocchi back into a round shape, ensuring the filling is sealed inside.
9️⃣ Boil the gnocchi in simmering water. Once they float to the surface, remove them from the water. 💧
🔟 Sauté the gnocchi in butter with garlic, a pinch of salt, and chives.
1️⃣1️⃣ Transfer the gnocchi to a baking dish.
1️⃣2️⃣ Make the sauce – in the same pan, simmer the cream with grated parmesan. 🥛🧀
1️⃣3️⃣ Pour the sauce over the gnocchi, and sprinkle more brie on top.
1️⃣4️⃣ Place the casserole under the broiler until the cheese is golden brown. 🔥
1️⃣5️⃣ Remove from oven and serve hot, being careful with the melted cheese. 🥘
