I love Turkey Dinner! In fact it's my nickname for family events & games. I earned the name several years ago when my wife Robin, daughter Bronwyn and both my sisters-in-law Becky and Emma ran the then Civil War Relay from Eugene to LBCC. It's a 52 mile race each member running 5 legs. I was about to run my last leg and we had a team of college kids coming up on us quick (we were pretty much the last ones on the course at this point) and my daughter bet me I couldn't average an 8 min. mile to keep ahead of the college kids. If I did it she would make me a full on Turkey Dinner. I earned that turkey dinner and my family nickname! The article doesn't talk about this but the past couple years I have started brining our turkeys and I love it. Also important to let it rest, that has been hard for me because I just want to dig in but letting the turkey rest is a game changer and is carving correctly. This year I am smoking our Thanksgiving turkey in the ground at elk camp. I can't wait, it's going to taste so good. No matter how you cook your turkey or if you don't have turkey, I wish you all a Happy Thanksgiving and may you enjoy the day with those you love! Happy Thanksgiving.
