🍂 Savor the swirl and stay wrapped in tasteful protection! 🧡
Instructions:
1️⃣ Preheat oven to 400°F (200°C). 🔥
2️⃣ Toss pumpkin cubes with olive oil, honey (or sugar) 🍯, salt, and pepper. Spread on a baking sheet and roast 20–25 minutes, until caramelized.
3️⃣ In a wide pot, warm the remaining olive oil. Add garlic 🧄 and rosemary 🌿; sizzle until fragrant.
4️⃣ Stir in roasted pumpkin cubes. Mash slightly to form a creamy base with caramelized bits. 😋
5️⃣ Nestle fettuccine nidi 🍝 into the pumpkin mixture.
6️⃣ Pour in hot water or broth 🫗 to just cover pasta. Cook uncovered, stirring gently, until nests loosen and pasta is al dente (about 12–15 minutes). ⏱️
7️⃣ Remove rosemary 🌿 and garlic 🧄. Stir in Parmigiano 🧀, black pepper, and a drizzle of olive oil.
8️⃣ Plate nests whole, spoon pumpkin sauce on top, and garnish with more Parmigiano and rosemary if desired. 🍽️✨
