The magic of this recipe is in the simplicity of the ingredients and the flavour that comes from the toasty burnt edges.

Beat the 1kg cream cheese, 280g sugar, and 5g salt together in a stand mixer on medium for 2-3 minutes, until smooth and silky. Then, add the 7 eggs one by one while the mixer is on low, and let it incorporate. Scrape the sides and bottom of the bowl to make sure everything is evenly mixed. Then, add the 1 tbsp vanilla, 1 tbsp lemon juice, and 400ml heavy cream. (Make sure not to measure the lemon juice and cream together, otherwise the cream would curdle.) Finally, dust the 10g flour through a sieve, into the cake batter, and mix it until there are no lumps.

Heat your oven to 250°C. Bake for 35 to 40 mins. Rotate the cake every 15 minutes or so, and watch the top carefully so there aren’t any overly burnt spots.)

September officially marks the end of the summer in the calendar and for many is seen to be the start of shorter nights, darker days and a tough time ahead.
I love September because the leaves start changing colour and start going that gorgeous red colour.
