What out sacred cacao plant looks like in its early life to full bloom. What a beautiful process. It takes about 3-5 years for the plant to bear fruit once it’s planted.

Have you ever considered all the work that goes into the sweet sweet panela or raw sugar cane?!

We are processing sugar cane grown with zero chemicals here at the center, in an artisanal process with a wooden mill called, trapiche.

First the very heavy sugar cane gets harvested and washed by hand.
Then, with at least 6 people to manage the trapiche, passing the sugar cane at least 2-3 times.
Collecting all the juice and straining it (trying some freshly milled too!)
Then it gets reduced to a molasses of pure sugar cane juice. We dont quite make it to panela just yet, but a delicious sugar cane honey 😋

It takes full team work, patience and attention but the result is so delicious! ✨️
