International Rocky Road Day apparently falls on a day we’re closed. Convenient timing, really.

The good news? There are still a few bars left, and they’re worth the detour tomorrow.

We’ve always loved stocking Pebbly Path because they’re doing exactly what so many regional businesses are trying to do — making a great product, backing local jobs, and building something special from country NSW. Small family business, handmade in Mudgee, and dangerously easy to eat.

So if you’ve been looking for an excuse to treat yourself, this is it.

The real question is: is it ever actually too late to celebrate Rocky Road Day?

Have you ever wondered what happens when a coffee roaster is handed a coffee that’s simply too expensive to get wrong?

With Golden Bean just around the corner, we’ve decided to take a leap and enter the Elite Category for the very first time.

The catch? These coffees arrive in tiny quantities. In some cases, just a single kilogram. There’s no room for trial and error, and definitely no room for a bad roast.

That’s why you’ll see us putting aside the big commercial roasters and reaching for a tiny sample roaster instead. It allows us to carefully explore different roast profiles, understand how the coffee behaves, and hopefully uncover the very best expression of what’s in the bean before committing precious coffee to competition.

It’s a fascinating process. Equal parts science, experience, intuition, and a little bit of nerves.

We’re stepping into unfamiliar territory this year, but that’s part of the fun. If you’re not occasionally doing something that makes you slightly uncomfortable, you’re probably not growing.

Day two at the Coffee Expo and the conversations just keep getting better.

Our coffee characters officially came to life today, wandering the show floor, posing for photos, starting conversations and proving that Captain Thunderbolt, Nat Buchanan and our Little Grumpy Girl might just be real after all.

One of the best parts of events like this is the people. We’ve had the chance to catch up with old friends from across the coffee industry, make plenty of new ones, and share a few cups along the way.

Good coffee, good conversations and good people. That’s a pretty hard combination to beat.

Day one at the Café & Coffee Show is done and dusted… and we barely took any photos because we were too busy having great conversations.

Good coffee. Good food. Good people. Plenty of familiar faces, and plenty of new ones too.

And yes, Nat Buchanan and Captain Thunderbolt made an appearance in real life. We may have hired actors… but it still counts, right? 😆

Tomorrow all three of our characters will be on deck, including Little Grumpy Girl, so if you’ve ever wondered what the faces on the bags look like in real life, now’s your chance.

And while the characters are fun, the real star of the show is still the coffee. Come by, say hello, have a chat, and try a cup for yourself.

That’s a wrap on setup day.

After months of planning, designing, building, packing, loading, unloading, and probably a little more coffee-fuelled problem solving than we’d care to admit, our stand is finally ready for the week ahead at the Cafe & Coffee Show in Darling Harbour.

Tonight’s reward? Pizza from Pizza Studio in Tamaki, a chance to sit down for five minutes, and an early night before the real fun begins.

We’re completely exhausted, our feet are sore, and somehow there is still coffee dust on everything we own… but we’re excited.

Over the next few days we’ll be pouring coffee, meeting incredible people from across the industry, catching up with old friends, making new ones, and sharing a little piece of Walcha with thousands of visitors.

Today was setup day at the International Convention Centre in Darling Harbour ahead of the Hospitality Show and the Cafe and Coffee Show, and what a day it was.

There’s something pretty special about watching an empty concrete floor slowly transform into hundreds of hospitality businesses, coffee roasters, equipment suppliers and food brands, all preparing to showcase what they do best.

This year we’re part of the Roasters Village and have somehow found ourselves on a corner stand between the legends at Di Pacci Coffee and 7 Miles Coffee. We’ve already spent some time chatting with the Di Pacci crew and you can immediately tell when people genuinely love coffee. Great conversations, great people and, if today is anything to go by, there are going to be some incredible coffees tasted over the next few days.

A huge thank you to the team at Sanremo Australia for helping us get set up on the stunning D8 espresso machine. Not only did they help get everything programmed and dialled in, but they also took the time to walk us through the machine and share their knowledge. It’s hard not to be impressed by both the equipment and the people behind it.

We’re also running some very cool grinder technology thanks to Barista Hub, while Chino Art’s automatic tamper and puck cleaner should help keep things moving smoothly when the crowds arrive.

Walking around the halls today was a reminder of just how big this industry is. The scale of some of these displays is incredible. For a small regional roastery from Walcha, it’s pretty humbling to be standing alongside some of the biggest names in coffee and hospitality.

That said, we may have one thing nobody else has.

We’re almost certainly the only exhibitors who brought part of their setup gear to an international trade show in a BCF Esky. 😂

Country people solve problems differently.

Yesterday started the way all good days should — with great coffee.

Our first cup of the morning was a pour over, bursting with body, juicy fruit notes and the sort of flavour that reminds you why specialty coffee is worth chasing in the first place.

While Jazz headed off for training on ECM coffee machines, I spent the day at a Foodpreneur workshop alongside a room full of passionate food founders. It was great to hear the stories behind so many Australian brands, share ideas, and learn from people all navigating the same challenges and opportunities of building businesses from the ground up.

There were some familiar faces too, including the team from - I should have brought some Rocky Road with me for the trip…. Hopefully there is some left when I get back to Walcha Coffee Roastery.

One of the highlights of the day was meeting with grocery buyers from another supermarket group. They’re currently looking at bringing Walcha Coffee into their stores, which is always an exciting conversation to have. Every new retailer represents another opportunity to tell the story of a small regional business and get our coffee into the hands of more Australians.

From exceptional coffee to great conversations and promising opportunities, it was one of those days that leaves you feeling grateful for how far we’ve come and excited about what’s next.

Most people see the finished product and assume it all came together pretty quickly.

The reality was months of ideas, sketches, second-guessing, redesigning, measuring, and a lot of conversations with Josh from Josh Wellings Building before we finally settled on a concept that felt right.

Then came the glamorous part… sticking what felt like an endless amount of Velcro onto LED light strips. Turns out bringing an idea to life is often less “Grand Designs” and more “why did we think this was a good idea?”

But standing back and seeing it finished made it all worthwhile.

What I love most about these shelves isn’t just how they look. They’re completely modular. Every piece can be pulled apart, packed up and rebuilt somewhere else.

Which is handy, because this week that’s exactly what we’re doing.

These shelves are heading to Darling Harbour where they’ll be rebuilt as part of our stand in the Coffee Roasters Village at the Café and Coffee Show.

Pretty exciting to see something that started as a conversation in a workshop about to be seen by thousands of people.

Now let’s see if we can remember how it all goes back together…
