As the weather gets colder, rich, slow-cooked game stew is a great way to warm the heart and utilise wild-harvested meat. The recipe below is straight forward, works with venison and goat as well, and it’s easy to substitute the beef broth with a can of crushed tomatoes or more vegetables such as eggplant, zucchini or celery, depending on the flavours you and your family enjoy.
🇩🇪 Wild Boar Goulash (Wildschweingulasch) 🇩🇪

Ingredients 🛒
• Wild boar: 2 lbs (1 kg), cubed
• Red wine: 2 cups (500 ml)
• Onion: 1, chopped
• Carrots: 2, sliced
• Tomato paste: 2 tbsp
• Beef broth: 2 cups
• Paprika: 1 tbsp
• Garlic: 2 cloves, minced
• Salt & pepper: to taste
Instructions 👩🍳
1️⃣ Brown the meat in a pot with a little oil.
2️⃣ Add onions and garlic, cook until soft.
3️⃣ Stir in tomato paste and paprika.
4️⃣ Pour in red wine and broth, add carrots.
5️⃣ Simmer on low heat for 1.5–2 hours until tender.
6️⃣ Season to taste and serve hot.
