We wanted to sit down and share something real with you โ not as a business, but as a group of people who took a big risk, worked hard, stumbled a bit, and are trying our absolute best to keep something alive in this little corner of the highway.โฃ

When we took over Salina a few months ago, we genuinely believed we could continue what it was. We loved the charm, the warmth, the historyโฆ and when we saw how much the community adored it, we wanted to honour that.โฃ

The previous owners had been trying to sell for over a year. They were wonderful people, and many customers were coming because of their personal touch. When they moved overseas as planned, something shifted. People who came ๐ง๐ฐ๐ณ ๐ต๐ฉ๐ฆ๐ฎ didnโt come back.โฃ

And there we were โ new in town, trying to carry a legacy that was deeply personal to manyโฆ with a kitchen that had just changed hands, a menu that was difficult to sustain, and a building layout that simply wasnโt built for fine dining.โฃ

Our new Head Chef โ honestly one of the best people weโve ever worked with โ did everything he could. We brought mains back, we tweaked the menu, we sourced the best ingredients we could find. We listened to everyone who gave us feedback.โฃ

We were getting pulled in two directions. And when youโre trying to build something new, being torn in half isโฆ really hard.โฃ

Then, cost of living went up. Our suppliers shared their own struggles โ one even had to sell their company. And while all of that was happening, we kept noticing something strange:โฃ

We needed to find a way forward that wouldnโt end with the doors shutting permanently.โฃ

We didnโt want Belmont to lose this place completely. We didnโt want the lights to go off. We didnโt want this location to become another empty shop that people walk past and remember as โthe restaurant that used to be there.โโฃ

Thatโs why we take so much pride in what we make. Weโve done our homework, weโve listened to locals, and we can confidently say:โฃ
