When we took over Salina a few months ago, we genuinely believed we could continue what it was. We loved the charm, the warmth, the historyโ€ฆ and when we saw how much the community adored it, we wanted to honour that.โฃ

The previous owners had been trying to sell for over a year. They were wonderful people, and many customers were coming because of their personal touch. When they moved overseas as planned, something shifted. People who came ๐˜ง๐˜ฐ๐˜ณ ๐˜ต๐˜ฉ๐˜ฆ๐˜ฎ didnโ€™t come back.โฃ

And there we were โ€” new in town, trying to carry a legacy that was deeply personal to manyโ€ฆ with a kitchen that had just changed hands, a menu that was difficult to sustain, and a building layout that simply wasnโ€™t built for fine dining.โฃ

Our new Head Chef โ€” honestly one of the best people weโ€™ve ever worked with โ€” did everything he could. We brought mains back, we tweaked the menu, we sourced the best ingredients we could find. We listened to everyone who gave us feedback.โฃ
