Annual Open Enrollment is right around the corner, starting October 15th and ending December 7th!!!

Ingredients
2 thinly sliced chicken breasts
2 Tbsp Sriracha
6 corn tortillas
1 cup chopped red cabbage
1/2 cup chopped peppers
1/4 cup feta cheese
1 lime

Instructions
Preheat oven to 375 degrees.
Place the chicken breasts on a baking sheet and top with Sriracha. Bake for 30 minutes (or until they're fully cooked).
While the chicken is baking, heat the tortillas up (optional).
Top each tortilla with chopped red cabbage and chopped peppers.
When the chicken has finished baking, shred it and place in the tortillas.
Top each taco with feta cheese and a drizzle of lime. Enjoy!

When traveling outside the U.S. it's always best to be prepared. Emergencies can be scary and the last thing you want to be worried about is your insurance coverage.
If you have Medigap Plan F, G, or N:
- Covers foreign travel emergency care if it begins during the first 60 days of your trip, and if Medicare doesn't otherwise cover care.
- Pays 80% of the billed charges for certain medically necessary emergency care outside the U.S. after you meet a $250.00 deductible for the year.

Medicare doesn't cover everything. If you need certain services Medicare doesn't cover, you'll have to pay for them yourself unless you have a secondary insurance to pick up the remaining balance. Even if Medicare covers a service or item, you generally have to pay your deductible, coinsurance and copayments. This is where Medigap coverage comes in. Once you're Medicare deductible is met your Medigap will then begin to pay the remaining balance that Medicare did not initially pay including your copayments, depending on the plan you choose.

As noted in our previous blog, Medicare's Initial Enrollment is 3 months before and 3 months after you turn 65. If you miss the 6 month deadline, and then later choose to enroll you will have to pay a penalty of 10% per year for each year you went without it.
If you choose not to enroll because you are still working or you have coverage through your spouses' insurance you can delay the enrollment and avoid the penalty.
However, retiree health coverage does not count as a credible coverage.
This rule also applies to Prescription coverage that we will discuss in length in future blogs.

There's no better way to kick off summer than with some tasty treats. Try this ice-cream sandwich recipe and let us know what you think.

Ingredients: (Original recipe yields 6 servings)
* Vegetable Oil Cooking Spray
* 1-2 cup all-purpose flour
* 1 tablespoon all-purpose flour
* 1/4 teaspoon baking soda
* 1/4 teaspoon kosher salt
* 1/3 cup sifted Dutch-process cocoa powder
* 3 tablespoons unsalted butter, softened
* 1/4 cup white sugar
* 2 tablespoons light brown sugar
* 1/2 teaspoon pure vanilla extract
* 1/3 cup whole milk, at room temperature
* 6 scoops vanilla ice cream

Directions:
Step 1: preheat the oven to 350 degrees F. Line a baking sheet with a silicone liner. Spray liner with cooking spray and rub it in to be sure it's completely covered.

Step 2: Whist 1/2 cup plus 1 tablespoon flour, salt, baking soda, and cocoa together in a bowl until thoroughly combined. Sift mixture if it seems at all clumpy or chunky.

Step 3: Mix butter, both sugars, and vanilla in another bowl with a spatula until you have a smooth paste. Add flour mixture along with milk and stir until batter is smooth and stuff. Clean off the spatula with a cookie scoop and drop 12 scoops batter onto the prepared baking sheet.

Step 4: Bake in the center of the preheated oven until the tops of the cookies no longer look wet and shiny, 9 - 10 minutes. Remove from the oven and tap and shake the pan on the counter 5 times to settle and compress the cookies. Let cookies cool to room temperature on the pan, about 15 minutes.

Step 5: Transfer baking sheet into the freezer until cookies are firm, about 15 minutes.

Step 6: Remove from the freezer and remove cooks from the pan by lifting the silicone liner carefully under each one. Poke 10 or 12 holes in the surface of each cookie with the sharp edge of a chopstick. Return to the freezer until ready to assemble.

Step 7: When ready to assemble, remove from the freezer. Turn one cookie upside down, place 1 scoop ice cream on top, and sandwich with a second cookie. Serve immediately or wrap in plastic wrap and freeze for 3 hours before serving. Repeat to make remaining ice cream sandwiches.
