COST DOESN’T NEED TO BE A BARRIER TO STAYING ACTIVE.
Seniors exercising outdoors Choosing to be physically active at any age can be a positive choice for your overall health. However, some people hold back because of limited access to exercise facilities or expensive equipment. The experts at the National Institute on Aging point out that you shouldn’t let cost get in the way of getting the physical activity you need. That’s because there are many free or inexpensive options. First, taking a walk at your own pace is an accessible activity for many people. If you’re concerned about air quality or bad weather while walking outside, you can walk in a mall, large retail store, or community center. Next, try free online exercise videos. You can also use items you already have at home (such as detergent jugs or books) to strengthen your muscles. Lastly, turn on your favorite music and dance! As long as you’re being safe, you can try different low- or no-cost ways to be as physically active as your abilities allow. If you’re unsure about what will work for you, talk to your doctor about which activities are approved for your personal abilities and goals.

Spring Roll Bowls
Making an appearance just in time for spring, it’s delicious spring roll bowls with sweet garlic lime sauce! They’re so simple to put together … yet, so beautiful and flavorful that you’ll feel like a chef. You can always add a protein if you want to supplement this meatless version. Plus, you can also choose to use your favorite sauce or make your own.
INGREDIENTS FOR THE BOWLS:
7 to 8 ounces of rice noodles
¼ cup each of basil, mint, and cilantro
1 serrano pepper
½ cup of chopped peanuts
2 avocados
2 carrots
1 red bell pepper
1 cucumber
INGREDIENTS FOR THE SAUCE:
3 cloves of garlic
2 tablespoons of rice vinegar
¼ cup of agave or brown sugar
¼ cup of fish sauce
⅓ cup of lime juice
⅓ cup of vegetable oil
DIRECTIONS:
If you’re making the sauce, pulse all of the sauce ingredients in a blender or food processor.
To make the rice noodles, cook by soaking them in cold water for about 30 minutes. When they’re softened, transfer them to a pot of boiling water for just a minute or two before quickly draining again.
Meanwhile, mince the herbs, slice the serrano pepper, dice the avocado, and peel or julienne the vegetables.
Toss the noodles — hot or cold, your choice! — with the sauce and all the other ingredients. Makes three to four servings.
