What are the criteria of a pure bird nest?
1, The look:
The structure and texture of a pure bird nest should be filamentous where the strips are vivid. Translucent under the light, body of the nest is not too thick. Nests’ surface of which added with edible glue usually are smooth, strips are glued together, some even clustered into one piece, reflects light when place under light or sun, body of nest is solid and awkwardly thick. Pure bird nests that are manually cleaned after soaking into water, will be fixated into the mold to be air-dried. Therefore traces of clips by the edges of the nests can be seen if observed carefully.
2, The smell:
Pure bird nests do not carry heavy smell of any sorts. Artificially processed bird nests usually carry chemical or moldy smell. Imitated bird nests smells fishy and oily.
3, After soaking:
Pure bird nests usually can be fully soaked within half an hour while the water still being clear. Filaments of bird nests are clean, smooth, and elastic. Whereas, for artificially processed bird nests, strips of nest calcified after gluing, therefore cannot be fully soaked up even after hours. Water turned yellowish after soaking. Strips of nests cluster up, and appearing wood-like-texture, hardened and unsmooth, continue to emit a chemical or moldy smell. If observe carefully, there are still little feathers found within the water after soaking for the pure bird nests. Whereas, artificially processed bird nests are bleached and nothing can be vividly seen within the soaking water.
4, The taste:
Pure bird nests appears translucent while strips of nests are still clear after boiling. Releasing an egg-y aroma. Texture in mouth is smooth and silky. Artificially processed bird nests appear glue-like, smells moldy and rough when tasted.
